The History Of The Victoria Sponge:
Dating Back To The 15th Century The Victoria sponge Was One Of The First Cakes To Be Made Without Yeast! The 19th Century Saw The Victoria Sponge Become A British Icon Thanks To Anne Russell (The Seventh Duchess Of Bedford) & Of Course Queen Victoria! In The 19th Century Dinner Was Typically Between 8pm - 9pm Meaning There Was A Long Period Between Lunch & Dinner. This Is Where 'Afternoon Tea' Came In! 

Anne Russell Often Complained About Hunger Around Mid Afternoon & Requested That  Tea & Light Food Was Brought To Her. Before Long She Started Inviting Friends Over Including Queen Victoria For Afternoon Tea! Queen Victoria Quickly Became Fond Of Afternoon Tea Which Consisted Of A Wide Range Of Tea, Cake & Biscuits. But Of Course Her Favourite Being A Plain Sponge Cake (Known As A Sandwich Cake) Filled With Jam & Buttercream Then Dusted With Sugar On Top. Now Known As Victoria Sponge Cake In Her Honour.
